Scalloped Potatoes

I love potatoes; baked, fried, roasted with onions, garlic and rosemary (mmmm...), and definitely in a potato salad, but when I want something warm, soothing and creamy there's nothing like scalloped potatoes it's one of my favorite side dishes especially with meatloaf (coming soon) and green beans.  Make this one soon you won't regret it!

Creamy Mac & Cheese

I know you're thinking not another "vegan" Mac & Cheese recipe. I don't know about you but sometimes I am so tired of cashews and nutritional yeast flakes, so to those who feel the same way this recipe offers a welcome relief.  This is not your traditional baked macaroni and cheese recipe.  It's more like a Velveeta creamy mac & cheese.  It's rich, creamy, warm and absolutely luscious.  And best of all no nutritional yeast flakes, cashews or nuts of any kind, no lemon juice, miso or tahini.  Just pure deliciousness in less than 20 minutes.
